Mango Chicken
This is really quick and easy and it tastes delicious. For the best results, use the tastiest mango chutney you can find. Garner’s is excellent if you can find it. As this can be easily scaled up or down, I’ve based the quantities on 2 people.
2 chicken breasts, diced into bite-size pieces
1 small tub of creme fraiche
2 (or more) tablespoons mango chutney.
Optional – half an onion, chopped; mushrooms, sliced
Fry the chicken breasts in a small amount of vegetable oil until cooked (add onions and /or mushrooms as required).
Tip in the contents of the pot of creme France and add the mango chutney. Stir until warmed through and serve with rice, mashed potatoes or bread – and green veg if you must.
