Salsa

Finely chopped red onion

Chopped cherry tomatoes (with the seeds fished out if you can be bothered)

Grated carrot

Finely chopped cucumber

Redcurrants (only because they were handy and drying up a bit)

Small piece of finely chopped fresh ginger

Juice of half a lime

Spicy mango chutney

Chop everything that can be chopped. Sling it all in a bowl and mix together with the mango chutney and lime juice. If the chutney and lime make it a bit eye-watering, add a dollop of creme fraiche.

Lovely with salmon.

    Sounds tasty. Can’t be ar**d with much but easy stuff, so this fits the category. I’ll leave the seeds in though. That’s how much I can be bothered! I’ve got the ingredients but for the redcurrants.

    I have some batches of mango chicken in the freezer- another of your easy tasty treats! The best food is that which is good and causes you little, if any, bother – much like most good things in life!

    Lockdown is exhausting! I’ve just chased the dog to get a paring knife out of her mouth that she had in blade first! Swapped it for a gravy bone🐶🐾. Face time soon? Xxx

    1. Like most of my cooking, there is very little in the way of measuring or exactness of quantities. It all depends what Ive got in and how many I’m cooking for 🙂
